Food Preparation before Refrigeration

For many people on his planet, they can remember a time before air conditioning and before refrigeration. Cooking was challenging and methods of preserving then restoring food became quite an art… some of those recipes from an older technology are well worth trying…. here’s a couple I have been working on:

Key Limes and the unique preparation make all the difference

Take one of my favorite recipes for Key Lime Pie. It was a great deal of time before air conditioning, refrigeration and steady power came to “the Keys of Florida.”. (Some folks still complain… they do have hurricanes that swamp certain areas. I remember one restaurant that measures each flooding with high water marks on its walls.) Back to the dessert, this famous but simple pie (the State Pie of Florida) is made with Key Limes ( not to be confused with the Persian variety) and condensed milk  … most delicious on a graham cracker crust!

This next brings me to the South African dish called “Smoorvis”… a wonderful meal of fish, rice, vegetables and Cape-Malay spices! The fish historically used were dried, salted and preserved in the sun. An effort was then made to reconstitute and ‘plump’ the fish prior and during cooking… today, many folks use smoked salmon ‘straight from the box.’

However, I am preparing it the old fashioned way… and it looks intriguing. Recipe to follow.

the contrast between good and not good

Here’s a small plug for  Fire.Org.  These are the wonderful guys & gals who run around the country defending students, faculty and an assortment of other nice folks from the whims and callousness — I say “capriciousness” — of university bureaucrats. They have offered up their own evaluations of universities across our great land.  Do you know where your college stands? CHECK it out! Each analysis comes with links to media coverage.

Did you that in some universities you can not even discuss whether or not any differences exist between the sexes … even in an academic setting? If you dare, then the full force of the university can land on you? 

Once some enterprising student takes them to court, these neanderthal regulations will fall, …. but until then, they will act as a law unto themselves. Sensoring speech is but the tip of the authoritarian iceberg in a lot of these schools… but it is their key stone and must be removed.

O.J. Simpson was a BRUIN! got proof!

all of my fantasies are gone!

I know it is hard to believe… but as this picture clearly indicates… and pictures don’t lie… O.J. Simpson was really a Bruin all along! Wouldn’t you know it was those dastardly Bruins who would do anything they could to besmerch the Good Trojan Name? How Low can you go?

“UCLA” Simpson seems to have  come into the news  with more problems. The latest is a claim by his lawyers that there is  no evidence against O.J.  Of course, I have been wrong before… I THOUGHT he was guilty the last time.

Another “PR Nightmare” ( as my daughter Karen would say) is Sally Field. Just as they thought it was safe to give her another award…  Sally uses the mike  to confirm that she is one step closer to a full time rubber room…. and trotted out the worn feminist rhetoric:

“Let’s face it. If the mothers ruled the world, there would be no god-damned wars in the first place.”

As for me, I will always remember Sally as the sweet nun who brought more sunshine into the lives of others than she was able to bring to her own… and O.J. as one of the greatest halfbacks of all time … but a street thug and no more. I still think he was a Bruin plant.

the Secret of Dieting is BUTTER

How I make my diet really work!

Almost every person who diets will tell you the same old lie: don’t make food your reward. Well, that is sort of true. You can’t live to eat, but let’s remind ourselves that one of the REAL reasons we got as big as we did in the first place is because we do enjoy great food.

So what can anyone do faced with two opposing realities: the joy of wonderful food and the need to lose weight. I call it ‘event planning.’ Choose a few spots during the year on which your plan to escape from the rigors of your diet. Maybe this is your birthday, thanksgiving and a few others spread out over the months. On these occasions plan for something delightful on your special days. Maybe a  Seafood GumboBobotie ( Lamb Casserole)Hoender Pastei (chicken pot pie) , add a great wine followed by a special dessert and you have the beginnings of a memorable event.

Having a few events along the way helps support the rigors of your diet.

When Local Kids go bad THEN join the ARMY

To say I was amused would be to sound a bit heartless, intolerant and unsympathetic. I am really not. However, I am constantly bombarded by — excuse the expression — leftists and liberals who moan the fact that their little not-so-immature son or daughter has run off and joined the army. In their minds, Greenpeace has just lost another foot soldier.

Part of the problem is that many parents — particularly mothers — do not realize that they can’t change who their children are inside just by the strength of a mother’s will. Biologically & from an evolutionary point of view, children are the product of their genetic history. They are descended from survivors, people of achievement — and yes — warriors. Now-a-days we can discover our genetic heritage… the little boy sitting next to you singing ‘kumbaya’ may be a direct descendant of Attila the hun!

Now why is it that some mothers think they can change all of that by forcing their munchkins to play mindless soccer, admonish them with ‘use your words and not your fists’ and drug up their boys if they attend school NOT acting like little girls?

Clearly these women are not thinking honestly…. but their children now are.

Dad’s Take:

We live in an increasingly competitive world and our children must be supported if they are going to have a chance at thriving in it. Every child has many talents and we must help them find, recognize then develop their unique and very individual skills. If you succeed, any occupation — they desire and train toward — can be wonderful… whether it be a scientist, artist, musician, athlete, scholar, linguist, academic, business or even a warrior. They key is to find something your child enjoys… and then back them up with time, energy and resources.
