On Karen’s second day was a full day at the conference PLUS a tour of Dalian and the surrounds! China’s largest stone animals and the largest plaza was part of the tour. A beach frequented by Russian Tourists was a hit as well!

Karen’s third day was all about her invited talk… And as is customary in our family we all say to her in a good natured way, ” What if no body comes ??!”

Knowing Karen it was a hit!

My daughters do travel and when they do the bring something back for ol Dad and Mom. The truth is… They are very generous! I particularly enjoy cookbooks… Although translations are slow and at times laborious.

They are fans of Jenny Craig nutrition and they bring it with them everywhere! In the above, Karen has taken a package of Jenny Craig cereal into the Cathedral of Notre Dame.

Father’s Day is a special day for those of us intrigued with the art of fatherhood. It certainly isn’t for everyone’s temperament… but I can’t imagine my life without the involvement. I tend to over do it a bit on this day… and Laura is kind enough to make my favorite dessert.

The perfect one pot meal is the cassoulet

I have always thought of the revered cassoulet much like a bread pudding. This is something made with extra meals found in a large commercial kitchen.

So if you are attempting this in a smaller home kitchen then extra time needs to be set aside to make all the components before putting it together and baking it off.

This is a French favorite or Cajun if you prefer the spicy Louisiana version. The typical recipe contains three major components: a duck “confit”, a lamb stew and a ham stew.

Given it is French, you would expect that it contains the “trinity” of onions ( I prefer sweet), carrots (roundels) and celery. A Louisiana style might also contain red bell peppers (as mine does). Wine is a popular ingredient and since this is a “blend of meals”, Cote du Rhone is an apropos addition.

Of course a healthy amount of beans is used… What we call Navy Beans

So, experiment a bit and make this ancient recipe for yourself and start your own family tradition!
