Spaghetti for one

My daughter Karla wanted Spaghetti with meatballs for lunch and since I am dieting… I accepted the challenge of making one serving. The sauce and noodles for one presents no challenge… But meatballs means drastically reducing and modifying our recipes.

I decided to vary my Scandinavian meatball for the occasion and ground my own beef:

MEATBALLS for One

1 egg
1/2 pound beef ground
1/3 cup bread crumbs
1 teaspoon brown sugar

1 teaspoon combination : salt, pepper, garlic powder

1/8 teaspoon combination: white pepper, allspice, cloves and nutmeg

Procedure : fry in a pan with a little olive oil

Yum!

I arrived in Louisville, Kentucky to wish our daughter Karen a happy birthday… And to share a day in her life. Karen is an Assistant Professor in Strategic Communications with many interdisciplinary research lines of interest from Social Media, crisis communication to related fields in Psychology and business.

Today, I sat in on two classes and really enjoyed the multi-media interactive lecture. Although I really found these classes interesting… The problem I see is that they would require me to take extensive notes…. Fun but work. Fortunately for me… I am not in these classes.

Our family enjoys doing many things and “teaching” is something we all do.

With this in mind, and with my daughter’s upcoming birthday , I wanted to see her classes. I will leave her formal evaluation to others… But I did enjoy seeing some almost hereditary mannerisms that seemingly came from times she sat in her mother’s or my classes.

At West Point, the students are very focused but I did see some unusually high motivation… If it were me, I would use the word “fear.” I know that look … I have experienced it myself as a younger man in a fast paced class.

Kristin reminds me much of her mother… Someone who can look into your soul and know you are unprepared. I am proud that Kristin is standing and delivering a great educational experience… But I am glad there is no test tomorrow… At least for me.
