onions and peppers oh my!Contrary to what experts will tell you, most people make fairly good decisions based on the restrictions and limitations they are confronted. If food is beyond their budget, they might bake their own or buy inexpensively delicious food.

So it is no surprise that fast food outlets can offer a hamburger for $1 are in such demand. The food may not be perfect… but it will allow you to survive and fight another day without breaking the bank.

However, what if you believe you need more fruits and vegetables into your life? Well, hold onto your wallet! Anyone who has at least visited the produce section in a local supermarket can measure how many ‘whoppers’ they can buy instead of a small carton of tomatoes or strawberries.

Fruits and vegetables are merely a garnish or overlooked in many meals today. In olden days, vegetables were ways to ‘extend’ or allow many more people to eat on a scarce amount of meat, today , it looks like it’s almost becoming the other way around.
Here’s what Science Daily has to say:

“That the cost of healthful foods is outpacing inflation is a major problem,” said Drewnowski. “The gap between what we say people should eat and what they can afford is becoming unacceptably wide. If grains, sugars and fats are the only affordable foods left, how are we to handle the obesity epidemic?”

Well… I would disagree slightly by saying that the ‘obesity epidemic’ has a lot more to do with how we live our lives rather than just what we eat. In the early 1900’s it was fashionable to say, ‘you are what you eat,’ but exercise and a healthy lifestyle are big contributing factors to increased longevity and should not be ignored. We cannot forget that many schools today have reduced or eliminated recess, reduced to two years the amount of physical education required in high school and in many overt and sometimes unconscious ways encouraged a sedentary lifestyle among our youth.

For my two cents… everyone needs to participate in a vigorous sport in high school, period.

What REALLY is Mexican Lasagna?

The short answer is… WHO KNOWS?

I think nearly everyone has tried something called “Mexican Lasagna” or at least heard of it. However, like some of the other dishes I have written about… Beef Stroganoff and Chicken Tetrazinni for example… often the name is the only thing that any of the recipes have in common. Sometimes the recipes become so blurred as in the case of the Stroganoff and the Tetrazinni that the only difference is that one has beef and the other has chicken… this is just wrong.

In any event, researching something called “Mexican Lasagna” was particularly challenging. This would indicate to me that the recipe is a ‘fusion.’ That is… it is a concept that came from two different cultural identities. The word ‘Lasagna’ — for example — can be traced back to the Roman and then back to the original Greek meaning ‘ cooking pot.’ This should sound familiar… we use the name ‘casserole’ to describe almost anything that is cooked in a dish.

So what is “Mexican Lasagna?”

The way most of us today think of Lasagna is as food served in layers. In the case of Italian Lasagna, we have basic layers of noodles and cheese. Many Mexican Lasagnas have layers of cheese slipped between deep fried corn tortilla strips… although this isn’t always the case. Adding to the confusion, there are several dishes that resemble ‘Mexican Lasagna’ under the names of ‘Chicken Mexicali’ or ‘Mexican Cheese Bake’ and the like.

On Saturday, we will be fixing “Mexican Lasagna” and in the true spirit of ‘fusion’ cooking… it will take the best — I believe– of all worlds!

Seafood Paella will Conquer Your Heart!

For those who have been following this blog, you probably realize that I have lost some weight (90 plus pounds) on Jenny Craig! However, now that we are on “maintenance” ( we’ve reached our goal weight), we tend to let things go one day a week… usually on the weekends.

This gives us a chance to dust off some of our old recipes and experiment with some new ideas… once again, it was time for “Paella” with our own hearty twist!

I have the green handle and the red handle pans from Spain… and I love them all! But the key to any Paella… is how it is receive!

Thanksgiving is Turducken!

Happy Thanksgiving, everyone!
Thanksgiving around our house is always Turducken … and if my adult children had their way… well, Mom and I would spend all our time preparing it! I really can’t blame them… it is wonderful… the spices! the Andouille sausage! and our stuffing!

This year was particularly challenging… without all the hungry appetites, we opted for a ‘smaller 13lb. turkey.’ I know… some folks feel that this is the ‘normal’ size… but to me Thanksgiving is best symbolized by the largest Turkey you can buy… we once fixed a 44 lb turkey that barely fit in the stove! The solution? Buy a bigger stove!

My concern this year was a practical one… would a smaller turkey handle the larger number of ingredients including the duck and the chicken? Fortunately, the turkey ‘stretched’! So tomorrow, I think we’ll have a smaller but gentler…  wonderful Thanksgiving!
