Mushroom Cookies a Scandinavian treat

In another life, one day a week was set aside as ‘baking day.’ My father talked about helping his grandmother make bread in giant kettles and the home filled with the wonderful smell of bread in all it’s many stages. Maybe, with the economy such as it is, we’ll all get back to baking and doing some of the things many let others do today.

One of our family traditions is making ‘Mushroom Cookies’ for Christmas. These cardamom enriched morsels are common throughout Scandinavia! Obviously we put out own twist on them! As a child I would always enjoy making desserts and cookies were one of the things I enjoyed making most. However, as our children grew, it became something that they would do and I would step back.

So, today, I set out to make some cookies with my own variations. First here is the basic recipe we use!

Mushroom cookies for Iraq!

Mushroom cookies are wonderful in that they have an unbelievably long shelf life. we gave some cookies to my mother and she found one left in a tin a year later and said it was the best she’d had! Part of the reason is that the many flavors do come out after the cookies sit around a while, so as tempting as it might be, let them sit around a while!

Speaking of fun things to make. Have you ever made your own potato chips? Karla loves them. I leave the peel on and use an automatic slicer to get them thin and before I fry them I soak them in water for a day or overnight in the refrigerator.

Carrot Cake Roll

There aren’t a lot of Carrot Cake Rolls on the internet. There are some commercial outfits that will display what they call a carrot cake roll  and I am sure there are carrots swimming through there somewhere. However, the challenge of making a roll from a standard carrot cake recipe is a big one!

However, I think it can be done and with only minor changes. The Amarula frosting really made it , too!

Two Layer Amarula Carrot Cake

Carrots, Pineapple, Apricot, Cream Cheese and Amarula!

Some cakes are destined to become classics. The Simple Carrot Cake is worthy of Klingon Song!

When Karen returned from South Africa after working with ‘Total Media’ a Public Relations firm in Cape town, she introduced us to a variety of culinary offerings: Bobotie certainly was one of the finest, the Brai ( a BBQ), Smoorvis ( a rice and fish dish) and not to be forgotten… Amarula. Amarula is a creamy alcoholic drink ( 20%) that can be used in about everything… inlcuding Karen’s addition of 5 tablespoons in our carrot cake! In South Africa, the Brittish introduced the apricot and that is in there too!

Great Recipes are Made or Stolen!

Karen & Laura's Blueberry Coffee Cake!I am very proud of my little band of chefs! Laura, Kristin and Karen all enjoy experimenting with new recipes, developing on old proven winners and when all else fails… they act like the pirates they are… and they “steal” one!

Actually, we don’t “borrow” from too many folks as their recipes usually suffer from various inadequacies: too many shortcuts, cheap ingredients, inadequate substitutions or they just stink. Was I ‘over the top here?’

Anyway, one of my family’s favorite items was prepared by a restaurant for whatever reasons left our little town of San Luis Obispo called ‘Hobbee’s’… and now can be found at least in one of my favorite places of my youth… Palo Alto. Forgiving it’s somewhat vegetarian cuisine for the moment, one of their nicer ‘treats’ was a blueberry coffee cake that was… delicious and always worth the trek.

For Some reason, my daughter Karen had never posted her mother’s and her adaptations to this recipe… they didn’t want to share it with ol dad who’s eyes always rolled at the mere hint of it’s baking! However, brought to you through excessive begging on my part… is their version of this great coffee cake!

Karen loves to put  Amarula ( a south African Liquor that reminds me of a nicer Bailey’s Irish Cream) in everything… so I wasn’t surprised to see it in here too!
