One of my favorite mid day meals is a Spanish Tortilla full of various aged ham, sausage, numerous types of onions, cheese and wondrous potato! All of this topped with sour cream, sliced olives and sectioned avocado.

Cooked in a pan and shaken slightly during the cooking process to keep the mixture from sticking and flipped to bake again … produces this beautiful composition!

In this picture above you can see the sliced aged ham making its appearance as well as the cilantro and fire baked green peppers if you look close enough!

Even the raw mixture and its delicious aroma has a come hither attraction.

If you haven’t ever made a Spanish Tortilla… maybe this is your chance… I have some step-by-step pictures on the link that will help you get there… oh yes, although I didn’t place it into the recipe… a cup of cheese into the mixture makes a wonderful addition!

When Laura and I were ‘chubby’, one of her favorite items was a natcho platter I would make that included my own home made tortilla strips, guacamole, refired beans, sour cream and various garnish. Well, obviously, we don’t do that anymore!

However, I was able to incorparate some of what I would add in her favorite dish with a fairly basic standard Spanish Tortilla recipe. I call this new recipe a ‘fusion’ as it incorpaorates some of the Tex-Mex style of my mother-in-law with that of the Spanish. For example, I use 6-8 ounces of 3 Mexican cheeses in the tortilla itself (which acts as an excellent binding agent), some smoked green peppers, a little of my own 15 spice curry blend to accent the Spanish Paprika… and the customary sour cream and olives that you find on most South-Western dishes.

Various ‘Old’ people once told me that time passed a lot faster as they aged.  And finally, one day they woke up surprised to seeing an old person looking back at them in the mirror. I never thought of this as particularly comforting. My ‘belief’ was that age was a state of mind, and I still think it is… for the most part. And although I do admit that  one year does seem to fold into the next rather seamlessly , I  think there is a sensible reason for this. Most people enjoy the predictability of life when it comes on our terms and we find comfort in the routine. When life is routine and predictable , time passes quickly and hopefully more happily for each of us.

So many of my routines have always centered around food, oddly enough. So much so, that my daughter Karen after reflecting on my life exclaimed with astonishment that I was a ‘foodie.’  It’s fun when one can still astonish any member of the family. I have adopted a new comforting routine of a Sunday midday meal consisting of a  Spanish Tortilla that always seems to bring a smile. When one smiles, time does often feel like it passes faster and leaves us a bit happier.

Laura wanted the Tortilla Española or Spanish Tortilla to begin her week on a happy note. So what’s a guy going to do  ,after all,  I enjoy it too! I added a bit more garnish and some of my own black bean and sweet corn salsa … and it was delicious!

Some food are difficult to make because they require special ingredients or specialized training. In this case, the right equipment makes the job a cinch.  I found a great pan — Actually two pans that can connect and disconnect with a temporary hinge at an old friends site. In addition to being extravagantly delicious, it is also relatively healthy… check this out!
